Spaghetti squash gets its name from its noodle-like flesh when roasted in the oven. Serve coated in your favorite pasta sauce, or simply with roasted tomatoes, chili flakes, and a generous grating of parmesan cheese on top.

Cooking Instructions

Preheat oven to 400º. Cut squash in half length-wise and scoop out seeds in the inner cavity. Drizzle flesh with olive oil and season with salt and pepper. Put flesh side down on a sheet pan and poke a few holes in the skin of each half with the tines of a fork (this allows steam to escape). Roast in oven for 30-40 minutes or until the skin can easily be poked by a fork, or the flesh is soft enough to flake into "noodles" with a fork.
