Ingredients:
Pariani Walnut Basil Pesto sauce (8 oz, pre-made): Pariani Walnuts, Organic Basil, EVOO, Parmesan, Sea Salt, and Pepper.
Jumbo White Shrimp Tails: Sustainably harvested from the Gulf of Mexico, arrive fresh with head off, but tail on — which will need to be peeled/deveined prior to cooking.
Mancini linguini pasta (17.8 oz, full package): durum wheat, semolina, water. Mancini produces their classic line pasta only using the durum wheat that they grow and harvest every year in the fields surrounding their pasta factory, following the Good Agricultural Practices. Cooking time is between 7-9 minutes.

- Start by toasting the pine nuts.
- Heat a dry pan over medium heat - recommend a non-stick or cast-iron pan if you have one.
- Drop pine nuts into the warmed pan, shaking frequently. Cook for 2-3 minutes or until you see the pine nuts turn toasted brown and fragrant. Remove pine nuts from pan to cutting board.
- Roughly chop after they have cooled, set aside. You’ll come back to these at the very end.
- Next, fill a large pot with water and add a sprinkle of salt, bring to a boil.
- As the pasta cooks (which will last approximately 7-9 minutes), get ready to prepare the shrimp.
- In a large skillet, heat olive oil on high. Once oil reaches maximum heat, add the shrimp. Sprinkle in a dash of sea salt and cracked pepper to taste.
- Cook the shrimp for approximately 8 minutes - or until the shrimp turn light pink and opaque in color. Turn off heat.
- Now drain the pasta and add into the skillet with the shrimp.
- Next mix in the pesto. You can use the entire container or less as the amount is at your discretion. Not included but also tasty option is to add some cream or half and half for a richer, creamy texture.
- Once all the pasta and shrimp are coated and swimming in the pesto sauce, you’re ready to plate your dishes!
- For the grand finale, sprinkle the toasted pine nuts on top.
