Black trumpets are a California delicacy. They have a very pleasant floral scent and cook to have a subtle truffle-like woodsy flavor. Their purple-blackish color can give any dish a beautiful color. They are shaped like little trumpets and are hollow throughout. Besides being delicious these mushrooms are also packed with nutritional goodies.

Prep Instructions:

THESE MUSHROOMS MUST BE WASHED. The process for washing these is similar to washing leeks. Black trumpet mushrooms are prone to getting pine needles stuck in their funnel-like bodies so there is a special technique for them which is as follows:

First, tear each one of them in half vertically one or two times making sure that there are no folded up areas where stuff can get stuck, then put them in a large bowl. Fill your bowl with cold water and gently mix the mushrooms around so the dirt and leaf bits can settle to the bottom very much like cleaning leeks or spinach. You can repeat this process up to four times depending on how dirty the mushrooms are but often times once is enough. Remove the mushrooms with your fingers to allow unwanted bits to stay in the bowl. You can place them in a salad spinner or squeeze them in your fist to remove excess water. Now they are ready to be cooked!

Cooking Instructions:

Sautee like you would any other mushroom in butter with onions or shallots. Or, add to your favorite risotto, pasta, or pizza.
